This light, creamy and indulgent ORSOM baked Brie with a festive cranberry and clementine compote is perfect for cosy nights in with friends and takes minutes to make, leaving you with more time to sit back and enjoy the festive season!


  • 200g ORSOM Breeze Brie
  • 200g Fresh Cranberries
  • Zest and Juice of four clementine’s
  • 100g Caster sugar
  • 3 Star Anise
  • 1 cinnamon stick
  • 1 rustic loaf of choice
  • Herbs of your choice to garnish


  1. Start by making the cranberry compote by adding the cranberries, clementine’s, sugar, star anise and cinnamon to a pan over a medium heat until all the sugar has dissolved and then simmer for a further 30 minutes until the liquid has evaporated and has a jam like consistency.
  2. Allow to cool and remove the cinnamon and star anise.
  3. Add the ORSOM Brie to a shallow oven proof ramekin or dish that is slightly larger than the cheese and bake in a medium oven for 5-8 minutes until golden.
  4. Add the compote to the cooked ORSOM Brie and garnish with herbs.
  5. Serve on a platter board with rustic bread or crunchy crackers and some simple fruit like grapes or apple slices.
